Halibut Olympia

With all the Halibut we catch during the summer, I'm always looking for different ways to prepare it.  This is a classic Halibut Olympia recipe with simple ingredients.  It's super easy to prepare and the end result is deliciously rich. ~Patti  
Ingredients:
2.5 pounds halibut, cut into 8 pieces (skinned, no bones)
2 cups sour cream
2 cups mayonnaise
1 bunch green onions, chopped
8 strips of bacon, cooked and crumbled
1/2 teaspoon garlic salt
1/4 teaspoon ground pepper 
1/4 teaspoon salt
1 cup Panko bread crumbs 
1/4 cup grated Parmesan cheese 

 Dice green onions.


 Combine sour cream, mayonnaise, garlic powder, salt and pepper. 
Stir in green onions.

 Crumble cooked bacon and fold into sauce.


Place halibut pieces in a lightly buttered 9 x 13 baking dish.
Pour sauce over halibut, covering thoroughly.  


Bake at 350 degrees, uncovered, for about 35 minutes or until fish is done.  It's done when it flakes easily with a fork and reaches an internal temperature 
of at least 145 degrees. 

Sprinkle 1 cup of Panko crumbs and 1/4 cup Parmesan cheese over halibut and sauce during the last 15 minutes of baking.
